Seasonal berries!


Well here we are into August and the midst of summer, perhaps someone needs to tell the weather that though! We're all about berries this month as they are in season and in abundance - blackberries, gooseberries, loganberries, raspberries, redcurrants, strawberries, tayberries - take your pick, but go British. The less they've travelled, the fresher they'll be!

No sugar summer fruit compote

1.3 kg mixed summer berries

75ml water

1tsp vanilla extract

1 finely grated pear

4tsps ground chia seeds (for thickening)

Place the mixed berries into a saucepan on a medium heat (reserve 175g for later) with the chia seeds and grated pear and start to cook down.

Add the water and continue to heat for approximately 10 minutes, the berries should be starting to break down and soften.

Add the reserved 175g of berries with the vanilla and leave on a low heat for 5 minutes.

Taste to see if you'd like to sweeten with a little honey or sugar.

This compote can be served warm or allow it to cool and decant into a sterilised, tight sealing jar and keep in the fridge for up to 2 weeks.
